King's Orchard Sour Cherry Pie
What you'll need
Sweet Pie Dough
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons sugar
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
- 1/3 cup cold vegetable shortening
- 5 or 6 tablespoons ice-cold water
Filling
- 2 pounds sour cherries, pitted
- 1 cup sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon almond extract
- 1 egg white, lightly beaten

What you'll need
Chocolate Crumb Crust
- 1 1/2 cups chocolate wafer cookie crumbs
- 3 tablespoons unsalted butter, melted, plus more for the pie pan

- 3 cups half-and-half
- 2/3 cup sugar
- 1/8 teaspoon salt
- 1/4 cup cornstarch
- 4 large egg yolks
- 5 ounces high-quality bittersweet or semisweet chocolate, finely chopped

Topping
- 1 cup heavy cream

Lemon Icebox Pie
What you'll need

- 14 whole graham crackers
- 1/4 cup sugar
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter, melted and still warm
Filling
- 2 (14-ounce) cans condensed milk
- 1 1/4 cups strained lemon juice (from the 2 zested lemons below plus an additional 4–6)
- Zest of 2 lemons
- 8 large egg yolks
Chantilly Cream
- 2 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1/4 cup confectioners' sugar

- 1 cup fresh (or frozen, thawed) peas

- 3/4 cup all-purpose flour
- 6 fresh sage leaves
- 4 thyme sprigs
- 2 sprigs rosemary
- 1 cup button mushrooms, halved if large
- 1 cup 1/4" rounds sliced fingerling potatoes
- 1 egg, beaten to blend
- Coarse sea salt and coarsely ground black pepper, optional
